CHICKEN OR LENTIL SAN CHOY BOW

1 teaspoon coconut or olive oil for frying
2 cloves garlic, minced
1 red onion, finely diced
1 teaspoon sea salt
400g organic chicken mince, cooked; or 1 can tinned organic lentils, rinsed and drained
1 tablespoon tamari sauce
1 tablespoon olive oil
2 tablespoons parsley, finely chopped
6-8 iceberg lettuce cups
½ avocado, smashed
1 tablespoon sesame seeds
Tamari-Mustard Dressing
2 tablespoons Dijon mustard
1 ½ tablespoons tamari sauce
1 teaspoon sesame oil
1 tablespoon spring onions, chopped
¼ cup water

Extras
Sesame seeds, chopped spring onions and parsley, to garnish
